对我国市场上山核桃属两种主要山核桃——美国山核桃和浙江山核桃果实品质展开比较研究。通过GC-MS方法比较分析2种核桃的脂肪酸成份,同时比较果实质量、果实形状、壳厚度、出仁率、出油率等一般性状。试验结果表明,单果质量方面,美国山核桃大于浙江山核桃;果壳方面,美国山核桃较薄;美国山核桃出仁率、出油率均高于浙江山核桃。浙江山核桃油〉总不饱和脂肪酸含量,美国山核桃油,美国山核桃果仁〉浙江山核桃果仁。总单不饱和脂肪酸含量,浙江山核桃油〉美国山核桃油,美国山核桃果仁〉浙江山核桃果仁。总多不饱和脂肪酸含量,美国山核桃油〉浙江山核桃油,美国山核桃果仁〉浙江山核桃果仁。美国山核桃油和果仁含有的油酸、亚油酸含量均高于浙江山核桃。本试验为2种核桃的进一步开发和工业应用提供了理论基础。
The fruit quality of pecan and Zhejiang walnut, two major nuts of carya species in Chinese market were compared. Fatty acid of two species were compared through GC-MS method, the fruit weight, fruit shape, shell thickness, kernel, oil were also analyzed. Results showed that pecan weighted more than Zhejiang walnut. Pecan had the thinner shell than Zhejiang walnut. The sequence of total unsaturated fatty acids content was Zhejiang walnut oil 〉pecan oil, pecan kernel 〉Zhejiang walnut kernel. The sequence of total monounsaturated fatty acids content was Zhejiang walnut oil〉pecan oil, pecan kernel〉Zhejiang walnut kernel. The sequence of total polyunsaturated fatty acids content was pecan oil〉Zhejiang walnut oil, pecan keruel〉Zhejiang walnut kernel. Pecan oil and kernel had the highest oleic acid and linoleic acid content. This experiment offered a theory basement for further development and industry use of these species.
