The inclusion between starch and iodine was studied in situ on nanometer scale by atomic force microscopy in air. Adding iodine into gelatinized starch could induce the inclusion. The membrane-like structures with an apparent height about 1 nm were observed changing into netlike structures with an apparent height varied from 0.6nm to 5nm. Fine structures revealed that some iodine-starch complexes entangled into helices, and some of them further folded into superstructures. We also studied the inclusion phenomena by adding iodine solution onto amylose sampies, in which, the amylose was obtained by the hydrolysis of potato starch using isoamylase.
