Sulfur- fumigation is a traditional post -harvest handling process for traditional Chinese medicinals, with the effects of insect prevention and anti - moth, as well as whitening. However, sulfur - fumigation can cause chemical com-position changes, which would result in potential activity alterations and safety hazards. This research summarizes the al- teration mechanism of chemical compositions in sulfur fumigated herbs through reviewing currently available information,so as to provide scientific bases for further research on evaluation of sulfur - fumigation in post - harvest handling of tra- ditional Chinese medicinals.
