The research of dielectric properties of the fruit is not only beneficial to analyze and monitor its quality,but also do effective use of the electric characteristics of the fruit sorting,storage,preservation,processing and quality inspection,using very widely.The paper conducts the thorough analytical study to domestic and foreign status and development of the fruit quality NDT technology based on dielectric properties,and point out our problems of the current research in this area,and focus of future research.
