从供应链视角研究了生鲜猪肉安全风险的评价和监管问题。首先从生产、加工、流通、销售四个环节分析了生鲜猪肉安全风险的来源,然后以此为基础,建立了以生鲜猪肉安全问题为初始事件,以管理类作业故障、技术设备类作业故障、环境类作业故障为后续事件,以供应链各环节作业故障和监控故障为底事件的生鲜猪肉安全问题故障树模型,接下来基于系统结构函数和系统风险评价模型,探讨了生鲜猪肉供应链安全风险的监管优化问题。结合算例,研究了生鲜猪肉供应链各风险点的重要度和关键控制点的问题。
From the perspective of supply chain, this article studies the evaluation and supervision of safety risk of the fresh pork. First, it analyzes the four sources of safety risk of fresh pork that is, production, machining, currency and sales. Then it uses fresh pork safety problems as the initial event, uses the management fault, the equipment and technology fault, the environmental fault as subsequent events, uses operation fault and monitoring fault in each link of the supply chain of the fresh pork as the bottom events, establishes the fault tree model of safety risk of fresh pork. Then, based on system structure function and the risk evaluation system model, it discusses the optimization of supervision of the security risks in the fresh pork supply chain. Combined with the example, this paper studies the importance degree of every risk point and critical control point.
