[目的]研究核桃和花生的傅里叶变换红外光谱,为鉴别不同产地的核桃和花生提供科学手段。[方法]利用傅里叶变换红外光谱法研究了核桃和花生、6个不同产地核桃的红外光谱特性,对它们的红外光谱进行了分析鉴别。[结果]核桃和花生、不同产地核桃的红外光谱的峰形和峰位基本相同,但在一些特征吸收峰上的吸光度值比方面存在差异。对于核桃和花生,吸光度值比A1746/A1653都大于1;而A1099/A1653核桃略大于1,花生小于1。根据吸光度值比A1746/A1653、A1099/A1653的差异可以区分6个产地的核桃。各样品的红外光谱主要特征吸收峰吸光度值比的差异,说明它们所含主要物质基本相同,但不同样品的主要物质含量有差异。[结论]红外光谱方法可用于鉴别核桃和花生、不同产地的核桃,具有方便、快速的优点。
[Objective]The research aimed to study the walnuts and peanuts by Fourier transform infrared spectroscopy (FTIR) to provide scientific way for identifying walnut and peanut from different areas. [Method]The infrared spectra of peanuts and walnuts from six different producing areas were analyzed. [Result]The results showed that the spectral shape and position of the peaks were very similar for the walnuts from different areas and between the walnuts and the peanuts. The differences were observed among the absorbance ratios of several peaks. For the walnut and peanut,the absorbance ratio A1746 /A1653 was greater than 1,while A1099/A1653 was slightly larger than 1 for the walnut and less than 1 for the peanut. By the differences of absorbance ratios of A1746 /A1653 and A1099 /A1653,walnuts from six different areas maight be discriminated. [Con-clusion]The FTIR might be a rapid,convenient simple and non-destructive method in determination of the origin of agricultural products.
