叶用莴苣(Lactuca sativa L.)又名生菜,富含多酚化合物、抗坏血酸、类胡萝卜素、VE等高活性抗氧化物质。本文从生菜抗氧化活性物质的组分及含量、抗氧化活性评价及抗氧化机理、外界因素对生菜抗氧化物的影响等方面综述了生菜抗氧化研究领域近年来的研究成果,并对未来研究方向进行了展望。
Lettuce ( Lactuca sativa L. ) is rich in antioxidant compounds such as polyphenols, ascorbic acid, carotenoid and Vitamin E. The paper summarized the recent studies on lettuee antioxidant and mainly focused on three perspectives including the constitution and content of antioxidant, the assessment and mechanism of oxidation resistance, and the influence of environmental, and other factors on antioxidant. Furthermore, the prospect in the field of lettuce antioxidant is discussed in detail.
