Aflatoxins are secondary metabotites mainly secreted by Aspergillus flavus and Aspergillus parasiticus, which are caicinogenic, teratogenic and mutagenic. They mainly harm liver, kidney and other organisms. Therefore, aflatoxins are very harmful to humanl In this paper, the hazard, extraction and the detection of aflatoxins were discussed. Furthermore, the prevention method of aflatoxins was suggested to provide a reference for further strengthening aflatoxin control.
