利用质构仪对酱牛肉产品进行检测,选用4种品牌的酱牛肉,TPA指标用主成分分析方法进行分析。结果表明:TPA测试技术可以快速和有效地对不同品牌的酱牛肉进行区分,具有较好的实际应用前景。
The texture analyzer was used to characterize and classify spiced beef samples from four brands, and their TPA properties were analyzed by principal component analysis. The results demonstrated that the TPA allowed rapid and effective distinguishing of spiced beef brands and would therefore have a promising prospect for practical applications.
