Using the methods of documentary collection and field investigation,on the basis of the investigation on fresh food supply of supermarket chains in Nanjing,and through Analytic Hierarchy Process（AHP）to identify and evaluate the risk of the fresh food supply chain,this paper put forward preventive measures：to adopt the advanced logistics technology and equipment;to attach importance to each link of fresh food supply chain;to strengthen the information system construction and set up the platform of information sharing;to improve the market survey and enhance the ability of prevention and protection market risk;to strengthen government supervision and cultivate the main part of the market.
