以鸡枞菌、红景天、山楂为原料,提取植物多糖、黄酮等物质,开发一种植物抗辐射饮料。对饮料中总黄酮、多糖含量等进行检测,并且做了功能性评价,包括OH·清除率、ABTS~+·清除率和DPPH·清除率3项指标。结果显示3种配方中,总黄酮含量最高为0.236 mg/mL,多糖含量最高为0.267 mg/mL,其对OH·、ABTS~+·和DPPH·有较高的清除率,最高清除率分别达到62.08%、80.12%和72.86%。研究表明这款功能性饮料具有很好的抗氧化作用和抗辐射功能。
A kind of plant anti-radiation beverage was developed, with the plant polysaccharides and flavonoids extracted fromthe rawmaterials of chicken firs, rhodiola and hawthorn.The contents of flavonoids and total sugars in beverages were tested and evaluated by functional evaluation, including hydroxyl radical scavenging rate, ABTS radical scavenging rate and DPPH radical scavenging rate. The results showed that the total flavonoids content in the optimum formula was 0.236 mg/mL and the polysaccharide content was 0.263 mg/mL, and its scavenging rate of hydroxyl radical,ABTS radical and DPPH radical was higher, and the highest clearance rate was 62.08%, 80.12% and 72.86% respectively.It shows that this kind of functional drink has good antioxidation and anti-radiation function.
