以江苏省张家港市凤凰镇的水蜜桃为试验材料,研究了常温下用1%,2%,3%普鲁兰多糖涂膜处理,对水蜜桃采后生理和保鲜效果的影响。研究结果表明,普鲁兰多糖涂膜处理能够有效地降低果实的失重率,降低延缓果实的呼吸高峰,维持果肉细胞的完整性,保持果实的硬度,有效地维持可溶性固形物的含量,降低果实果肉细胞的质膜过氧化程度,并使多酚氧化酶(PPO)处在较低的活性状态,有效地提高了好果率。3个处理组中以2%的普鲁兰多糖效果最为显著。
The Fenghuang honey peaches picked from Zhangjiagang city, Jiangsu province, were selected as the experiment materials. The peaches were treated with 1%, 2%, 3% pullulan solution and stored at normal temperature. The results showed that pullulan coating could effectively reduce fruit weight loss rate, the delayed fruit breathing peak and maintained the integrity of the pulp cells, kept fruit hardness, effectively maintained soluble solids content, reduced the fruit pulp cell membrane of peroxide and polyphenol oxidase (PPO) in lower active state. The 2% Pullulan coating was effective in peach storage and much more suitable for promotion.
