木糖醇是食品中糖类物质的良好替代品,而且在医药、抗龋齿中也得到广泛的应用。生物法工艺易操作、低能耗、低污染,用生物法替代化学法生产木糖醇是一种发展趋势。本文对生物法生产木糖醇的菌株进行分类综述,从菌株发酵性能、基因工程菌的改造方法、发酵条件和优化以及固定化技术在生产中的应用等几个方面进行概括和总结,系统阐述了生物法生产木糖醇菌株开发的最新研究进展,并对其前景进行了展望。
Xylitol is a good substitute for sugar, and it has been widely used in medicine, dental care. Biological method has many advantages, such as easy operation in technology, low energy consumption, and low pollution. It is a development tendency to produce xylitol using biological method instead of chemical method. Strains for producing xylitol by biological method were reviewed from several aspects such as strain fermentation performance, fermentation conditions, genetic engineering methods, and the optimization and application of the immobilized techniques. Recent advances in the development of strains for producing xylitol were illustrated and the future development was prospected.
