以市售的养心菜为试材,测定了其叶片与叶柄中部分主要营养保健成分的含量,同时对其理化特性进行了分析。结果表明:养心菜以叶柄中淀粉、蛋白质、葡萄糖等成分的含量高于叶片;养心菜中膳食纤维含量较高,以不溶性膳食纤维为主;养心菜叶柄的持水率与膨胀力高于叶片;养心菜对不饱和脂肪的吸附能力总体在1.0g/g左右,而叶柄对饱和脂肪的吸附能力大于叶片;当养心菜用量为0.01g时,其对胆固醇的吸附能力达最大;不同时间处理对养心菜吸附胆固醇的能力存在差异。
Taking commercially available Sedum aizoon L. as material, content of nutrition and healthy components in petiole and blade and physical and chemical properties were studied. The results showed that the content of amylum, protein,glucose in petiole were higher than those in blade. The content of dietary fiber was higher in Sedum aizoon L. , mainly with insoluble dietary fiber. The water holding and expansion force capacity in petiole was higher than that in blade. The total absorptive capacity for unsaturated fat of Sedum aizoon L. was 1.0 g/g. Petioles of saturated fat adsorption ability outweigh the blade, the strongest adsorption capacity for cholesterol was 0. 01 g Sedum aizoon L. material. There were significances among different time treatments.
