The mutton classification standard and evaluation technology play an important role in promotion of mutton production,guidance of the customers and prosperity of the mutton trades.The evaluation system was pointed out on the basis of the standards all around.After analyzing and discussing the current status of classification standard and evaluation technology,many efforts should be focus on establishing a carcass grading and evaluation system which is rapid,accurate and objective.
