以海参体壁为原料,研究酶解法制备海参胶原蛋白肽的工艺条件。通过单因素试验和响应面分析对酶解工艺条件进行优化。结果表明,酶解法制备海参胶原蛋白肽的最佳工艺条件为:以木瓜蛋白酶为水解酶,控制酶解温度67.8℃、酶解时间4h、酶加量2500U/g、pH值6.7、底物浓度5.5%,该条件下,海参胶原蛋白肽的水解度为17.76%。
Take sea cucumber body wall as material,the processing condition was studied for production of collagen peptides by enzymatic method.Through single factor experiment and response surface method,the enzymatic condition was optimized.Results showed that the optimum enzyme was papain.The optimum conditions for papain were listed as below:Temperature 67.8 ℃,reaction time 4 h,enzyme dosage 2500 U/g,pH 6.7,and the substrate concentration 5.5%.Under such conditions,the measured DH of the sea cucumber collagen peptides was 17.76%.
