以玉米须为原料,研究了玉米须总黄酮粗提物对猪油的抗氧化性.结果表明,玉米须总黄酮粗提物在192 h内对猪油氧化过程中氢过氧化物生成的抑制作用略低于BHT与维生素C,对猪油氧化过程中丙二醛与游离脂肪酸生成的抑制作用与BHT和维生素C相当;当玉米须总黄酮粗提物浓度为0.212 4mg/mL时,对羟基自由基的清除率达到81.3%,明显优于BHT.
Using the corn silk as material,the antioxidative effects of total flavanone crude extract from corn silk on lard oil were studied.The results showed that inhibitory effect of hydrogen peroxide generated in the lard oxidation process by total flavanone crude extract from corn silk was slightly lower than that by BHT and Vitamin C in 192 h.Inhibitory effect of malondialdehyde and free fatty acids in the Lard oxidation process by adding BHT and Vitamin C was similar.When the concentration of total flavanone crude extract from corn silk was 0.212 4 mg/mL,reducing power on hydroxyl-radicals can reach 81.3%,much better than that of BHT.
