嗜热链球菌是最具经济价值的同型发酵乳酸菌之一,广泛应用于发酵乳品尤其是酸奶的生产。该菌合成胞外多糖、产细菌素、蛋白酶及风味物质等重要生产特性,直接影响到发酵乳品的品质特性。本文就该菌关键生产特性研究进行概述。
Streptococcus thermophilus is one of the most valuable homo-fermentative Lactic acid bacteria, which is widely used for the production of fermented dairy products, especially in the yogurt production. The important production characteristics of S. thermophilus, such as the pro- duction of extraceUular polysaccharide, bacteriocins, protease and flavor substances, directly affect the quality characteristics of fermented dairy products. In this paper, the advances of the key production characteristics of S. thermophilus were presented.
