The procedure of plant adapting the low temperature stress can induce a series of physiologic and biochemical responses, and expression of some genes are also induced, such as antifreeze protein genes, late-embryogenesis-abundant protein genes and transcription factor genes. Expression of these genes are sequential and interdependent, thus they form the molecular mechanism of low temperature responses. In order to improve the mulberry molecular breeding technique, three major low temperature induced proteins of plant mentioned above were summarized in this paper. Meanwhile, we narrate the molecular mechanism of the cold and freeze resistance characteristics of plant.
