研究了从粗提取、硫酸铵分级沉淀、离子交换和反相液相三步纯化步骤获得的鹰嘴豆α-淀粉酶抑制剂的DPPH、-OH和·O2-自由基清除能力和还原力特性。结果表明:反应体系中,在一定浓度范围内,α-淀粉酶抑制剂的抑制活力、自由基清除能力和还原力不仅随浓度增加而增加,也随纯度增加而增强。
The DPPH, · OH and ·O2- radical - scavenging activity and reducing power of α- amylase inhibitor obtained from crude extracts, ammonium sulfate precipitation, ion exchange chromatography and reversed phase liquid chromatography was studied. The results showed that the inhibitory activity, the free radical scavenging capacity and reducing power of the α- amylase inhibitor not only increased with the increase of its concentration, but also increased with the increase of its purity in the reaction system within a certain concentration range.
