食源性致病菌是威胁人类食品安全的重要因素之一,广泛存在于各类食品中。噬菌体作为一种特殊的病毒,广泛存在于自然界中,可以专一性侵染细菌和真菌等微生物,具有防治各种病原菌的能力。近年来,由于抗生素的过度使用,导致具有抗生素耐药性的“超级细菌”出现,使得人们迫切寻找可以替代抗生素且高效对抗致病菌的方法,噬菌体防治方法逐渐引起人们的重视。噬菌体防治方法对人体安全无害,主要原因是噬菌体对哺乳动物细胞没有影响,并且具有高度的宿主特异性。本文对噬菌体作为生物防控制剂防治几种主要的食源性致病菌方面的应用做一概述。
Bacteriophage as a special virus, widely present in nature, can infect bacteria and fungi specifically, with the ability to control a variety of pathogens. In recent years, the excessive use of antibiotics has caused antibiotic resistance and led to the rise of "superbugs", making people eager to find alternative and efficient ways to fight against pathogens. Phage control methods gradually aroused people's attention. Phage control methods are safe for human health, mainly because phage has no adverse effects on mammalian cells and has a high host specificity. This article provides an overview of using phage as a biological control agent to control several major foodborne pathogens.
