天然食用香料浸膏中氨基酸的分析

采用酸水解法和氨基酸自动分析仪测定了茉莉浸膏、杭白菊浸膏、桂花浸膏、酒花浸膏、鸢尾浸膏、树兰花浸膏、枫槭浸膏和树苔浸膏共8类天然食用香料浸膏(共22个样品)中16种氨基酸的含量,如天冬氨酸(Asp)、苏氨酸(Thr)、丝氨酸(Ser)等。研究结果表明,除了茉莉浸膏、酒花浸膏、爱普鸢尾浸膏中未检测到氨基酸外,其他浸膏都含有氨基酸,种类基本相同,但氨基酸的总量均偏低,在5.29~833.54mg/100g之间;杭白菊浸膏中氨基酸的平均总量最高769.13mg/100g,其中拓普杭白菊浸膏氨基酸总量最高,为833.54mg/100g;树兰花浸膏中氨基酸平均总量最少6.135mg/100g,其中烟草树兰花浸膏中氨基酸总量最少,为5.29mg/100g。单因素方差分析结果表明,不同浸膏中氨基酸的含量具有显著性差异;聚类分析结果表明,所测浸膏主要分为两大类,第一大类包括树兰花浸膏、桂花浸膏、枫槭浸膏、树苔浸膏,第二大类是杭白菊浸膏。

英文摘要:

Sixteenkinds of amino acid( such as Aspartic acid,L-Threonine,L-Serine and etc.)were determined in 8 natural flavor concretes by hydrochloric acid hydrolyzed and automatic amino acid analyzer. The natural flavor concretes including 4 Jasmine concretes,3 white Chrysanthemum concretes of Hang Zhou,3 Osmanthus fragrans flower concretes,2 Hops concretes,2 Orris concretes,2 Aglaia odorata flower concretes,3 Maple concretes and 3 Treemoss concretes. The results showed that 16 amino acids were not found in 4 Jasmine concretes,2 Hops concretes and 1 Orris concrete from Aipu,but detected out in other concretes.The amount of amino acids was low in all the concretes,and was between 5.29 ~ 833.54 mg/100 g. The total average amount of amino acids was significantly higher in white Chrysanthemum concretes of Hangzhou than other concretes,and it was 769.13mg/100 g. The highest of total amino acidamount was in white Chrysanthemum concrete of Hangzhou from TuoP u,and was 833.54mg/100g;and the minimum was Aglaia odorata flower concrete from Yancao with 5.29mg/100 g. Factor analysis of variance showed that there were significant differences in the amounts of the same amino acidfrom different concretes. These concretes were divided into two categories by cluster analysis according to the total amount of amino acid. Aglaia odorata flower concretes,Osmanthus fragrans flower concretes,Maple concretes and Treemoss concretes were classified as the first category,white Chrysanthemum concretes of Hangzhou were grouped as the second category.
