以稻米为原料,采用表面活性剂十二烷基磺酸钠降低稻米淀粉蛋白质含量。结果显示:提取稻米淀粉的最佳工艺条件是十二烷基磺酸钠质量分数为0.5%,液固比为1:6,浸泡时间为2h,蛋白质质量分数为0.5%,淀粉提取率为74.5%。
The native rice protein content was reduced by surfactant sodium dodecanesulphonate (SDS), The result showed that the optimum process conditions were surfaetant SDS concentration 0.5%, solid to liquid ratio 6:1 and soak time 2 h, The protein content in the rice starch was 0.5% and the extraction rate of starch was 74.5%.
