运用HACCP原理对无铝泡打粉生产过程进行了危害分析(HA),确定关键控制点(CCP)为原辅料及包材的验收、过筛/粉碎、配料、混合,且制定了相应的关键限值(CL),并通过建立HACCP计划表对关键控制点进行监控,确保无铝泡打粉的质量安全。
The producing process of aluminum-free baking powder was subjected to Hazard Analysis according to the HACCP principle. Critical Control Points were determined as follows, checking and accepting of the raw material,supporting material and packing material ,filter or pulverizing,quantifying of material and mixing of material. In addition,the Critical Limits of all Critical Control Points are also determined.The Critical Control Points were monitored through the establishment of HACCP plan to ensure the qualitv of aluminum-free baking powder.
