果实是园艺产品的最主要类型,在人们日常生活的饮食结构改善、人体营养平衡、摄取维生素等生理活性物质等方面具有不可替代的作用。以果实为代表的园艺产业占我国整个种植业总产值的45%以上,成为了保障全民健康体质、提高人民生活质量的必需产业。果实品质是当前及未来园艺产业健康发展和市场竞争力的核心。园艺产品品质研究在果实色泽和苦味等方面取得了突破性的进展.部分研究成果成为了植物代谢研究的亮点。本论文综述了近年来在果实花青苷、类胡萝卜素和葫芦素代谢与调控方面的研究进展,并指出了当前果实品质研究存在的问题以及未来努力的方向。
Fruit is the primary form of horticultural products.Fruits play essential roles in human daily life, such as improving the dietary composition, balancing the nutrition elements, and intaking health-beneficial compo- nents. The horticulture industry in China constitutes more than 45% of the crop industry, and the product quality is becoming the critical factor of horticulture in- dustry and market competition. Recent researches in fruit quality have begun to reveal the mechanism of fruit pigmentation and bitterness formation, part of the results are breakthrough and highlights the fruit quality researches worldwide. This review summarized the progress in the metabolism and regulation of anthocyanins, carotenoids and cucurbitacin in fruits, and proposed the aspects for future studies
