通过短期厌氧和纯氧处理探讨了呼吸活性和能量代谢对采后荔枝果实衰老和品质劣变的影响。结果表明,2种处理均降低褐变指数和细胞膜透性,但提高呼吸强度、腺苷三磷酸(ATP)含量、能荷值和交替氧化呼吸途径在总呼吸中的比例,并且短期厌氧处理效果好于纯氧处理;另外,短期厌氧处理提高了果肉乙醛、乙醇含量,降低了果皮细胞色素氧化呼吸途径在总呼吸中的比例,而纯氧处理作用则相反。结果表明能量水平与呼吸活性密切相关,并参与荔枝果实采后衰老和品质变化的调控。
The interaction between respiratory activity, energy metabolism and quality deterioration of harvested litehi fruit was investigated by short-term anaerobic and pure oxygen treatment. It was observed that browning index and membrane permeability was reduced, but respiration intensity, ATP content and the contribution of the ahemate oxidation pathway to the total respiration were increased in the short-term anaerobic and pure oxygen treated fruit with the former a much better effect. Furthermore, energy charge, contents of acetaldehyde and ethanol were increased while the contribution of the eytochrome oxidation pathway to the total respiration was prohibited in the short-term anaerobic treated fruit, but reverse effect was observed in pure oxygen treatment. It was suggested that energy level was closely related with respiratory activity, and involved in the senescence and quality control of harvested litchi fruit.
