植物多酚是植物中一类重要的功能性成分,在农业、食品、制革等方面得到了广泛应用。对植物多酚的种类、结构特点、分离提取方法及生理功能进行了综述;对其分析鉴定和分离提取的常见方法进行了介绍,并比较了这些方法的优缺点:较为详细地介绍了植物多酚的生理活性,阐述了其在食品工业中的应用,并对植物多酚的应用前景进行了展望。
Polyphenols is one kind of important functional composition contained in plants. It has been used in many industries, such as agriculture, food, leather-making and so on. In this paper, the species, structures, detection, extraction and bioactivity of polyphenols were summarized. The methods of its detection and extraction were discussed, and the advantage and disadvantage were also compared. The bioactivity of polyphenols was recommened in detail. The application of polyphenols in food industry was introduced, the prospect was also discussed.
