【目的】为探讨日粮代谢能水平与粗蛋白质含量对5~10周龄肉鸭生长发育性能及肌肉品质的影响。【方法】选取540只5周龄苏邮2号肉鸭,采用3伊3两因子设计法,设置9个处理组,每组3个重复,每个重复公母各10只,能量水平为:高代谢能(HE,12.20MJ/kg)、中代谢能(ME,11.80MJ/kg)和低代谢能(LE,11.40MJ/kg),蛋白水平为:高蛋白质(HP,16.80豫)、中蛋白质(MP,15.30豫)和低蛋白质(LP,13.80豫)。【结果】结果表明:淤第1、2、4、5、6组试验鸭平均日增重显著地高于第3、9组(P<0.05),第3、9组料重比显著地高于其余各组(P<0.05),第5、6组试验鸭体斜长显著地高于第1、9组(P<0.05)。饲粮代谢能和粗蛋白质水平对平均日增重有显著的互作效应(P约0.05),粗蛋白质水平对体斜长有显著的影响(P约0.05)。于第5组试验鸭半净膛率、全净膛率、腿肌率、胸肌率与第1组相比,差异达到显著水平(P<0.05),第6组全净膛率与第1组间差异显著(P<0.05),第5、8组腿肌率显著地高于第1、2组(P<0.05),第5组胸肌率与第3组间差异显著(P<0.05)。粗蛋白主效应在半净膛率、全净膛率间达到显著水平(P约0.05),胸肌率的代谢能主效应显著(P约0.05),腿肌率的代谢能粗蛋白的互作效应显著(P约0.05)。盂肌苷酸含量在各个试验组间以及不同肌肉组织间的差异不显著(P>0.05),但肌苷酸在胸肌中的含量普遍要高于腿肌,代谢能、粗蛋白及代谢能粗蛋白的互作效应均不显著(P>0.05)。第8组试验鸭胸肌粗脂肪含量显著地高于第1组(P<0.05),胸肌粗脂肪含量代谢能粗蛋白互作效应显著(P约0.05)。第7组试验鸭腿肌pH值显著地高于第8组(P<0.05),代谢能粗蛋白间的互作效应显著(P约0.05)。【结论】在相同饲养管理条件下,采食代谢能11.80MJ/kg、粗蛋白15.30%的
