The purple potato is rich in nutrients. In recent years,the use of purple potato value is explored with more and more people,all kinds of purple potato research and development of new products has become a research hotspot. This paper reviews the nutritional value of purple potato, summarizes many common purple potato products processing process,summarize the points out the key technology of machining process. It provides some reference for the purple potato products to expand the development and utilization.
