以不同品种黑豆种皮为材料,采用pH示差法测定武乡小黑豆发芽过程中和不同黑豆材料种皮中花色苷的含量。结果表明,武乡小黑豆在发芽过程中花色苷含量基本呈现下降趋势;不同温度下发芽的武乡小黑豆种皮中花色苷含量大小顺序为20℃〉18℃〉30℃〉25℃;不同黑豆材料种皮中花色苷含量差异较大,其中,SNWS47种皮中花色苷含量最高,为12.31 mg/g,而平南种皮中花色苷含量较低,仅有2.70 mg/g;通过对DPPH自由基的清除能力比较不同黑豆品种中花色苷的抗氧化活性,结果表明,青黑豆种皮中花色苷抗氧化活性最高,IC_(50)为0.011 mg/L;武乡小黑豆IC_(50)最大,为4.391 mg/L,说明其抗氧化活性最低。
In this paper, the difference of anthocyanin content in the seed coat of Wuxiang small black bean was determined by pH differential method with different varieties of black bean testa as materials. The results showed that the content of anthocyanin in Wuxiang small black soybean showed a downward trend during germination. At different temperatures in Wuxiang black seed germination peel anthocyanin content the order was 20 ℃18 ℃30 ℃25 ℃. The anthocyanin content of different varieties of black soybean seed coat was different, and the content of anthocyanin in SNWS47 seed coat was the highest, which was 12.31 mg/g, and the content of anthocyanins in the Pingnan seed coat was lower, only 2.70 mg/g. In addition, the antioxidant activity of anthocyanins in different black soybean varieties was compared by scavenging the DPPH radical. The results showed that the antioxidant activity of anthocyanins in black bean peel was the highest, IC_(50) was 0.011 mg/L, Wuxiangsmall black IC_(50) was the maximumand it was 4.391 mg/L, antioxidant activitywas the lowest.
