研究不同原料品种苹果脆片的品质差异,运用层次分析法,选取20个晚熟原料品种加工的苹果脆片为研究对象,对其L、b、脆度、膨化度、糖酸比、产出率、粗蛋白7个评价指标进行综合分析,得到各指标对产品品质影响所占的权重以及苹果脆片品质综合排名。结果表明,品质最好的苹果脆片品种为红玉,其次是澳洲青苹和红富士,品质排名最后的品种为Ⅱ10-15。
In order to study the quality of different varieties of apple slices,the 7 quality evaluating indicators of 20 varieties of late maturity apple slices were analyzed by analytic hierarchy process,obtaining the weight of different indexes related to the apple chips quality and overall rankings.The results showed that the variety with the best quality was "HongYu",followed by "Granny Smith" and "Fuji",the variety with the last quality was "Ⅱ10-15".
