比较单宁酶、脂肪酶、猪胰脂肪酶、木瓜蛋白酶、胰蛋白酶、糖化酶、果胶酶和α-淀粉酶对酯型茶黄素(TFDG)的水解效果,并对最佳水解酶的反应条件进行优化。结果表明,单宁酶水解酯型茶黄素的效果最好,其反应最佳条件为反应体系的温度40℃、pH值5.0、酶浓度2.4mg/mL、最佳反应时间120min。水解后茶黄素中简单茶黄素(TF)的含量从52.51mg/g提高到199.84mg/g。
The research was designed by using enzymes including tannase,lipase,porcine pancreatic lipase,papain,trypsin,glucoamylase,pectinase and α-amylase,to compare the hydrolytic effect of estertheaflavins(TFDG) and to obtain the optimum reaction conditions of the best hydrolase was selected.Results showed that the optimum condition were as follows: temperature of reaction system 40 ℃,pH 5,enzyme concentration 2.4 mg/mL,reaction time 120 min.The content of TF increased from 52.51 mg/g to 199.84 mg/g under these optimum conditions.
