选取质构仪的TPA、下压、穿刺和剪切模式对淡水鱼丸的弹性、凝胶强度、硬度等主要质构进行测定,研究各模式下的测定参数对测试结果的影响。研究发现:TPA模式下的探头运行速率和样品压缩比例对鱼丸的弹性、咀嚼性测定存在显著性影响(P〈0.05),对样品内聚性无显著影响(P〉0.05);而样品厚度对弹性、咀嚼性、内聚性均存在显著性影响(P〈0.05)。下压模式测定凝胶强度时,下压速率在180~420mm/min时,对凝胶强度的测定无显著影响(P〉0.05);样品厚度对凝胶特性有显著性影响(P〈0.05)。穿刺模式测定硬度和黏性时,穿刺距离和穿刺速率对鱼丸的硬度测定存在显著影响(P〈0.05),对黏性无显著影响(P〉0.05)。剪切模式测试剪切力时,剪切速率对鱼丸的剪切力无显著影响(P〉0.05),而样品厚度对剪切力有显著影响(P〈0.05)。因此,研究者应充分地考虑各模式下的参数设置对质构测试结果带来的影响。
Analyzed the effects on the results in the parameter settings by using the texture analyzer to test the springiness, gel-strength, hardness and other main texture properties of fish balls with different test mode such as TPA, compression test, puncture test and shear- ing test. The results showed; as to the TPA test of measuring springiness, chewiness and cohesiveness, the effects on springiness and chewiness depending on the different cross-head speed and sam- ple compression-degree were significant (P〈0.05), with little effect on the cohesiveness (P〉0.05) ; and the sample thickness affected the three characteristics significantly (P〈0.05). To the compression test of gel-strength, the data showed that there was no significant differences (P〉0.05) to the gel-strength of fish balls between the cross-head speed of 180 mm/min and 420 mm/min; otherwise, thesample thickness affected marked (P〈0.05). As to puncture test of hardness and adhesiveness, the puncture-depth and puncture-speed affected the results of hardness (P〈0.05), however, it didn't pres- ent significant eHect to adhesiveness (P〉0. 05). As to the data of shearing test, it showed that there was no significant difference (P〉0.05) on the various test-speed, but it showed the positive correla- tion trend about the sample thickness. Therefore, the influences of parameter under each mode should be considered adequately by the researchers.
