针对淀粉直接转化麦芽糖相对困难、高浓度麦芽糖生产效率低的工业难题,以麦芽糊精作为碳源,获得一株能将麦芽糊精转化为麦芽糖的α-1,4葡聚糖麦芽糖苷酶生产菌。能够转化糊精为麦芽糖并清除葡萄糖的发酵条件为:酵母粉2g/L,麦芽糊精50g/L,培养基初始pH值为6.0,发酵温度为35℃。
One strain producing α-1,4-glucan maltose glycosidase was isolated from soil sample to remove maltooligosaccharide from maltose products. The isolate was able to hydrolyze maltooligosaccharides into maltose and digest glucose. The optimum producing condition is 50 g/L maltooligosaccharide and 2 g/L yeast extract at pH 6.0 and incubated temperature 35℃.
