为了评价有机茶的品质,以江苏地产有机绿茶和3种地产普通绿茶为对象,分别采用酒石酸铁比色法、香荚兰素比色法和高效液相色谱法(HPLC)、电感耦合等离子体原子发射光谱法(ICP)测定了茶叶中茶多酚、儿茶素、重金属和游离氨基酸含量。结果表明,有机绿茶中茶多酚、儿茶素总量分别为17.55%、12.90%,低于普通绿茶3;游离氨基酸总量为17.55 mg/g,低于普通绿茶1、高于普通绿茶2和普通绿茶3;有机绿茶中重金属含量低于国家标准和行业标准,且明显低于其他3种茶叶。从总体上看,有机绿茶品质较好。
In order to evaluate the quality of organic tea,one kind of organic tea and three kinds of tea produced in Jiangsu(Green tea 1,Green tea 2,Green tea 3) were used for samples,and tartaric acid iron colorimetric method,vanilla aroma colorimetric method,high performance liquid chromatography(HPLC) and inductively coupled plasma atomic emission spectrometry(ICP) were used respectively to detect the contents of tea polyphenols,catechins,heavy metals and free amino acids.The results showed that the total contents of tea polyphenols and catechins in organic tea were 17.55% and 12.90%,which were less than Green tea 3;free amino acids was 17.55 mg/g,which were lower than Green tea 1 and higher than Green tea 2 and Green tea 3;heavy metal contents in organic tea was under the national standard and industry standard,and significantly below the other three kinds of tea.In general,the quality of organic tea is good.
