Free fatty .acid is an important indicator for evaluating cereal quality during storage. Firstly, the principles and method steps of standard detection technology were described, some of developments were discussed, and the current problems were summarized, too. Secondly,three rapid detection techniques were focused on,such as near infrared, olfaction visualization techniques and electronic nose, and the advantages and disadvantages of each method were listed and compared, which provided reference for the rapid determination of free fatty acids in the future.
