[目的/意义]乳制品是每个家庭的重要营养食品之一,然而其销售环节的食品安全信息透明度如何,目前的学术界尚未对此开展深入研究。[方法/过程]基于1 601家乳制品商家的408 255个调查采样数据,借助网络层次分析-模糊综合评价模型,对乳制品销售环节的食品安全信息透明度开展研究。[结果/结论]研究结果表明:(1)乳制品销售环节的食品安全信息透明度较差,整体存在较高的食品安全隐患;(2)线下不同类型商家销售乳制品的食品安全信息透明度参差不齐,食品安全隐患集中于一般商家和小卖铺;(3)线上购物网站销售乳制品的食品安全信息透明度过低,食品安全隐患最为严重,国家对线上食品安全信息披露的监管亟待强化。
[ Purpose/Significance ] Dairy product is one of the important nutrition foods for every family. However, the food safety infor- mation transparency of dairy products in selling process has been studied only in limited researches. [ Method/Process ] Based on the 408 255 sample data from a survey of I 601 dairy products merchants, applying network hierarchical analysis-fuzzy comprehensive evaluation model, we carried out a research on food safety information transparency of dairy products in selling process. [ Result/Conclusion ] The research results show that: food safety information transparency of dairy products in selling process is poor and the food safety hazards are relatively high; different types of offline dairy products merchants present different levels of food safety information transparency, with food safety hazards usually occur in general merchants and tuck shops; the food safety information transparency of online dairy products merchants is too low and the food safety problem is the most serious, and the supervision on the disclosure of food safety information of online dairy products merchants needs to be strengthened urgently.
