通过分析比较野生和养殖三疣梭子蟹(Portunus trituberculatus)的肌肉、肝胰腺及生殖腺的营养成分,对其营养价值进行综合评价。采用国家标准方法测定组织中的粗蛋白质、粗脂肪、灰分、氨基酸和脂肪酸。结果表明,粗蛋白质以肌肉中含量最高,养殖蟹平均为81.69%,野生蟹平均为74.02%;粗脂肪以肝胰腺中含量最高,野生蟹为57.28%,是养殖蟹42.42%的1.4倍。共检出38种脂肪酸,肝胰腺的脂肪酸组成最丰富,其饱和脂肪酸(SFA)和单不饱和脂肪酸(MUFA)总量显著高于卵巢和肌肉中的含量;而多不饱和脂肪酸(PUFA)总量及EPA+DHA含量则表现为肌肉〉卵巢〉肝胰腺(P〈0.05);EPA+DHA两者含量之和高达20.21%~36.91%,占PU—FA的2/3以上;C18:2(n-6)、C18:3(n-3)和C20:4(n-6)等PUFA的含量,均表现为野生蟹显著高于养殖蟹(P〈0.05)。氨基酸组成中以谷氨酸含量居首位,氨基酸评分(AAS)和化学评分(CS)评判氨基酸显示,赖氨酸的相对含量最为丰富,第一限制性氨基酸为含硫氨酸(蛋氨酸及胱氨酸);三疣梭子蟹的必需氨基酸(EAA)与总氨基酸(TAA)的比值(E/T)、与非必需氨基酸(NAA)的比值(E/N)皆高于FAO/WHO的评价标准,且野生蟹肌肉的E/T和E/N显著高于养殖蟹(P〈0.05)。由此可知,三疣梭子蟹营养组成合理,且野生蟹品质优于养殖蟹。
In order to get a synthetic evaluation of the nutritional quality between wild and cultured of Portunus trituberculatus, crude protein, crude lipid, ash, amino acids and fatty acids in muscle, hepatopancreas and ovary of Portunus trituberculatus were determined by adopting national standard method. Results showed that crude protein content in the muscle was the highest, and it was 74.02% for the wild and 81.69% for the culture. Crude fat content in the hepatopancreas was the highest, and crude fat of the wild (57.28%) was 1.4 times than that of the culture (42.42%). There were 38 kinds of fatty acids and the fatty acid composition in hepatopancreas was the most abundant. The contents of saturated fatty acid (SFA) and monounsaturated fatty acid (MUFA) in hepatopancreas were higher than those in ovary and muscle. The total amounts of polyunsaturated fatty acids (PUFA) and EPA + DHA were muscle〉 ovary〉 hepatopancreas ( P 〈 0.05). The level of EPA+ DHA reached up to 20.21%-36.91%, and being more over 2/3 of PUFA. The contents of C18 : 2(n-6), C18 : 3 (n-3) and C20 : 4(n-6) in the wild were higher than those in the culture (P〈0.05). The glutamic acid content was the highest in amino acids. Evaluation of amino acids by AAS and CS showed that the lysine relative content in the tissue of wild or culture of Portunus trituberculatus was the richest, the first limiting amino acid was sulfur-containing amino acid (methionine and cystine). The rate of essential amino acids/total amino acids (E/T) and essential amino acids/nonessential amino acids (E/N) were all higher than evaluation criteria of FAO/WHO, and the E/T and E/N in muscle in the wild of Portunus trituberculatus were significantly higher than those in the culture (P〈0.05). In conclusion, nutritional composition of Portunus trituberculatus was reasonable, moreover, the quality of wild Portunus trituberculatus was better than that of culture.
