在模拟胆结石有序结构的体系中,选取三油酸甘油酯(GTO)为研究对象,考察其Co^2+-DC^-凝胶体系有序结构的影响。分别用扫描仪及体式显微镜记录体系产生的沉淀的时空图案;傅里叶变换红外光谱(FTIR)和扫描电镜表征从凝胶中剥离的沉淀的微观结构及形貌。结果显示:GTO有利于粉色沉淀的生成,分形的维数降低;SEM图片表明GTO的加入会使粉色沉淀纤维的有序性下降、纤维易聚集成束,并且短纤维增多。加入GTO使浅粉色沉淀的纤维变长,且易形成层状结构;FTIR表明加入GTO可能使沉淀中DC-的含量减小;GTO浓度较高时可以参与金属离子配位,沉淀为多配体组分的混配物,具有非化学计量特征。通过考察日常食品中的物质对结石影响的研究,学生兴趣浓,应用于本科生的开放实验教学系统,有利于培养学生的创新能力。
High triglyceride is concerned with gallstones. We add triolein which is one of triglycerides into Co^2+-Na DC gel systems,and analyze the periodic and chaotic patterns by the means of FTIR spectra and SEM. Thus,we could study the effect of triolein on the ordered precipitations in Co^2+-Na DC gel systems. The periodic and chaotic patterns reveal that GTO is beneficial to obtain pink precipitations and makes precipitations volume smaller; SEM images indicate that GTO can decrease the orderliness of pink precipitation,and increase the short fibers and gathered fibers. GTO also increases the length of the light pink precipitation fibers,and easily forms the layered structures. FTIR results show that adding GTO may decrease DC-content in precipitate.
