采用顶空固相微萃取-气相色谱-质谱联用技术(HS-SPME-GC-MS)分析新疆产地啤酒花及颗粒花中的挥发性成分.通过优化不同萃取纤维、萃取时间、萃取温度和不同萃取样品量对所鉴定出的化合物峰面积的影响,确定固相微萃取的最佳条件为100 μmPDMS萃取纤维、萃取时间30 min,萃取温度70℃,萃取样品量0.15g.在优化的萃取条件下,进一步测定不同产地、不同品种的啤酒花中挥发性成分的组成,采用SPSS 16.0软件进行聚类分析和判别分析,为啤酒花品种和品质的鉴定提供依据.
The volatile components of Xinjiang origin hops and hops particles were analyzed by headspace-solid phase microextraction-gas chromatography-mass spectrometry (HS-SPME-GC-MS).The effects of different SPME fibers,extraction time,temperatures and extraction volumes on the peak area of the identified compounds were investigated.The optimal SPME extraction condition was 100 μm PDMS extraction fiber,time 30 min,temperature 70 ℃ and sample weight 0.15 g.Further analysis of volatile composition under the optimal condition of hops samples from different origins and different varieties were developed,and cluster analysis and discriminant analysis were made via software SPSS16.0.The results provided a basis for hop variety and quality identification.
