油茶多酚是油茶中最重要且分布最广泛的次生代谢物质之一,不仅对油茶的品质、色泽、风味和抗逆性有一定的影响,而且具有天然的抗氧化活性、抑菌、清除自由基、抗肿瘤、抗凝血、抗血栓、降血糖及对脂肪酸合酶的抑制作用等功能。为了进一步了解油茶多酚的化学本质及其潜在的利用价值,从而为油茶多酚的研究提供参考依据,文中综述了油茶多酚的提取、成分分析、功能研究和分子结构改造等方面的研究情况和研究进展。
Polyphenols is the most important and widely distributed secondary metabolites in Camellia oleifera. It not only promotes quality, luster, flavor and stress resistance of C. oleifera, but also possesses excellent biological functions, such as antioxidant activity, antibacterial activity, scavenging free radical, anti-tumor, anticoagulation, antithrombotic activity, hypoglycemic action and inhibiting fatty acid synthase. In order to further understand chemical mechanisms and potential use value of polyphenols in C. oleifera, and to offer a reference for researching polyphenols in C. oleifera, this paper reviewed the status and advance in research on extraction, ingredient analysis, function research and molecular structure modification ofpolyphenols in C. oleifera.
