In the teaching of food physical and chemical determination technology curriculum, role transformation method was used to deepen students understand and grasp of the knowledge and skills. This paper discussed the purpose, feasibility and concrete method, summarized the teaching effect acquired and the main existing problems, providing reference for improving the teaching quality of food physical and chemical determination technology curriculum.
