以心里美萝卜芽为材料,研究了施氮处理对萝卜芽次生代谢产物芥子油苷含量的影响。结果表明,氮素供给影响萝卜芽的芥子油苷含量。氮素浓度为4mmol·L^-1时,萝卜芽中总芥子油苷含量显著高于对照(0mmol·L^-1),其余氮素浓度下(2、8、16mmol·L^-1)总芥子油苷含量则低于对照。脂肪族芥子油苷总含量及单一种类芥子油苷含量的变化趋势与总芥子油苷含量相似。吲哚族芥子油苷总含量以及吲哚基-3-甲基芥子油苷和1-甲氧吲哚基-3-甲基芥子油苷含量在各施氮处理下均低于对照。
The effects of nitrogen supply at different levels with 2 -16 mmol·L^-1 N on glucosinolates of radish sprouts were studied. The results showed that the effect of nitrogen supply on content of total glucosinolate was obvious. The nitrogen supply treatment(2, 8 and 16 mmol ·L^-1) decreased the content of glucosinolate, except the 4 mmol·L^-1 N concentration. The changes tendency of content of individual glucosinolate and total glucosinolate of aliphatic glucosinolate were consistent with total glucosinolate. Whereas, the content of total indole glucosinolate, indol- 3 -ylmethyl glucosinolate and 1 -methoxyindol -3 -ylmethyl glucosinolate under all the nitrogen supply treatment were all lower than the control.
