风险评估是整个风险分析体系的核心和基础,对影响食品安全的因素进行风险评估是保障食品安全、促进食品贸易和健全食品安全管理体系的重要手段。本文概述了我国水产品中安全风险来源,对我国在微生物和病毒等生物危害,渔药、甲醛、多聚磷酸盐等养殖、加工与流通过程中的投入品与添加物,重金属及水产品进出口贸易等方面开展的风险评估研究工作进行综述,分析指出我国在水产品风险评估中存在的问题,提出了加强水产品风险评估方面的相关建议,为进一步开展水产品风险评估,以确保我国水产品质量安全和进出口安全提供借鉴与参考。
Risk assessment is the core and foundation of risk analysis. Risk assessment of the factors that affect the food safety is of great importance to guarantee food safety, promote food commodity trade and improve the food safety management system. This paper overviews the sources of food safety risks of aquatic products in China, summarizes the recent progress in risk assessment of aquatic products for biological hazards such as microorganisms/viruses as well as fishery drugs, formaldehyde, polyphosphate and heavy metals in import and export trade. We point out the main problems existing in the risk assessment of aquatic products such as lack of basic data. We also put forward some suggestions on strengthening the safety risk assessment of aquatic products in order to ensure the quality and safety of aquatic products in China.
