本文运用案例分析的方法,通过研究餐饮企业的商业模式,并以餐饮行业的海底捞和外婆家为例,从价值主张、盈利模式以及组织设计三个方面研究其商业模式独到之处,并以此为基础,对中国餐饮企业的商业模式的发展提出一些建议:准确的市场定位和规范的企业制度是餐饮企业致胜的法宝,先进的服务理念以及独特营销策略是企业创造利润的源泉。
This paper, using the case analysis method, through the study of catering business model, and the case study of the catering enterprises, the Haidilao and the Waipojia, studies their unique features from three aspects of the value proposition, profit model and organization design. Based on this, it puts forward some suggestions on the development of China catering business model: accurate market positioning and standardized enterprise system is a magic weapon for the catering enterprises winning; advanced service concept and unique marketing strategy is the source of enterprise profit.
