目的:利用喷雾干燥技术生产乳杆菌粉可以提高菌的存活率,减少杂菌。方法:采用喷雾干燥法制备嗜酸乳杆菌菌粉。结果:嗜酸乳杆菌(L.acidophilus)高温驯化的最高适应温度为45℃;通过L9(34)正交实验得出乳酸菌高温驯化抗热保护剂最佳配比是在MRS液体培养基中添加蔗糖6 g/100 mL,明胶1 g/100 mL,甘油2%;嗜酸乳杆菌的喷雾干燥最佳工艺条件为:进口温度160℃,米粥浓度3%、流速50(即1.875 L/h)。结论:采用喷雾干燥制得的的菌粉得率较大,并具有非常大的灵活性,干燥速度可以随时调节,喷雾干燥的操作是连续的,这样可以大大缩短干燥时间。经过高温驯化后的乳酸菌还可以保持很大的活性,且未感染杂菌。
Objective:The use of spray-drying technology to produce Lactobacillus powder can increase the survival rate of bacteria and reduce other bacteria.Methods: Preparation of spray-drying of L.actobacillus acidophilus powder.Results: The highest optimum temperature of L.acidophilus after high-temperature taming was 45 ℃.Through orthogonal experiment L9(34),L.acidophilus optimized spray drying conditions are as follows: Inlet temperature 160 ℃,the concentration of 3% of congee,flow rate 50(1.875 L/h).Conclusion: The use of spray-drying the powder obtained in larger yield,and has great flexibility,drying rate can be adjusted at any time,spray drying operation is continuous,it can significantly shorten the drying time,after high temperature domestication,lactic acid bacteria can be maintained a great activity,and did not infected with bacteria.
