采用中性蛋白酶水解低值鱼蛋白,分析各因素对鱼蛋白水解的影响,通过正交试验对水解工艺进行优化研究。结果表明,当溶液pH为7时,酶浓度为2800U/g,底物浓度(料液比即g/mL)为1:10,温度为55℃,时间为5h,在此条件下水解度为38.24%。
This article mainly researches the hydrolysis of low- price fish with neural protease,and analyzes the effect of each factor on hydrolysis degree,and optimizes the technological conditions through the orthogonal experiment. The results showed that when the solution p H 7,enzyme concentration( the ratio of material to liquid) was 1: 10,temperature 55℃ for5 h. Under these conditions,the degree of hydrolysis reach 38. 24%.
