测定了樱桃籽仁的水分、粗蛋白、粗脂肪、灰分、矿物质的质量分数,并对其脂肪酸及氨基酸组成进行了分析。结果表明,樱桃籽仁中水分质量分数为6.12%,粗脂肪、粗蛋白、总糖、粗纤维、灰分质量分数(以干重计)分别为5.04%、5.51%、18.72%、38.36%、26.38%;樱桃籽油中共含有13种脂肪酸,包括6种饱和脂肪酸和7种不饱和脂肪酸,分别占脂肪酸总量的12.15%和87.85%。不饱和脂肪酸质量分数最高的是油酸和亚油酸,分别为218.43和247.27 mg/g;同时还含有共轭亚麻酸,质量分数为60.12mg/g。樱桃籽仁蛋白质主要由清蛋白、球蛋白、谷蛋白和醇溶蛋白构成,含有18种氨基酸,其中8种为必需氨基酸,占总氨基酸质量分数的27.94%。樱桃籽仁中矿物质元素K、Ca、Na、Mg、Zn、Cu、Fe、Mn质量分数(以干重计)分别为53.19、2.79、46.37、604.59、34.44、24.78、7.56、39.9μg/g。
The content of moisture, crude protein, crude fat, ash, minerals and fatty acid of cherry seed kernel were determined. The results showed that the moisture content of cherry seed kernel was 6.12%, and the content of crude fat, crude protein, total sugar, crude fiber, ash (dry weight) were 5.04%, 5.51%, 18.72%, 38.36%, 26.38%, respectively. Thirteen kinds of fatty acids were determined in cherry seed oil, including six kinds of saturated fatty acids and seven kinds of unsaturated fatty acids, accounting for 12.15% and 87.85% of total fatty acids, respectively. The most content in unsaturated fatty acids were oleic acid and linoleic acid, accounting for 218.43 and 247.27 mg/g respectively. Conjugated linolenic acid content was 60.12 mg/g in cherry seeds oil. The proteins in cherry seed kernel composed of globulin, albumin, glutelin and prolamine, which contained eighteen kinds of amino acids including eight kinds of essential amino acids, taking up 27.94% of all the amino acids. In addition, the contents of K, Ca, Na, Mg, Zn, Cu, Fe (dry weight) in cherry seed kernel were 53.19,2.79,46.37,604.59,34.44,24.78,7.56,39.9 μg/g, respectively.
