为研究高压脉冲电场(PEF)食品非热处理过程中处理室内部电气击穿问题,用蒸馏水和NaCl水溶液为样品,重点研究了在平板、同场2种不同类型的处理室电气击穿过程中,当样品电导率分别为97、211、299μS/cm以及溶氧密度分别为7.19、8.84、9.80mg/L时处理室内部的放电情况。研究结果表明:处理室内产生气泡的面积和数量决定了处理室放电情况;随着液体电导率增加和空气含量(溶氧密度)增大,处理室内部发生电气击穿的几率均有所提高。为减少PEF长期工作时的放电活动,建议保持处理室平均电场强度〈40kV/cm,同时在PEF处理单元前加入脱气装置。
To deal with the problem that electric breakdown happens in the treatment chamber during the process of non-thermal food treatment with pulsed electric field (PEF), taking distilled water and NaCl solution as objects, we spe- cifically studied discharges inside treatment chamber of cross-field structure and co-field structure, respectively. In the experiments, we used liquids of three conductivities, namely 97, 211, and 299μS/cm, and three dissolved oxygen density, namely 7.19, 8.84, 9.80 mg/L. The experimental results show that the discharge condition is determined by the number and area of gas bubbles formed inside the chambers, and the probability of electric breakdown inside treatment chamber increases with both solution conductivity and air content (dissolved oxygen density). Hence, to reduce the discharge ac- tivity during long-term PEF processes, the average electric field intensity should be below 40 kV/cm and a degasser should be added before PEF processing units.
