The symbiosis mechanism of LAB in milk is a very complicated network regulation system. In order to elaborate the symbiosis mechanisms of Lactobadllus delbrueckii subsp, bulgaricus and Streptococcus thermophilus, the protein metabolism, nucleotide base metabolism, oxidative stress and carbon source metabolism were discussed. The purpose of this paper was to offer the related information about the screening and application of the starter bacteria.
